While it’s true that you can certainly do things like cut the dome off your cake to make it more level, wouldn’t it be easier if your cake popped out of the oven perfectly level – no messing around?! We think so – here are few tips that might help you do just that.
Weigh your batter
You’re more likely to get even layers of cake if each cake pan is filled equally. While it’s probably faster to split your batter into your pans by eye, placing each pan on your scale while pouring your batter will tell you if your batter is split evenly. All or both of your pans should weigh the same amount for you to have even layers.
Remove air bubbles
This is super easy, just gently rap your pans down on the counter a couple of times before you place them in the oven. This will remove any big air bubbles & will also level out your batter in the pans.
Some say that lowering the temperature of your oven can help prevent a dome from forming in the center of your cake.
Most cakes bake at 350 F. So, reducing the temperature to 325 will likely help you get that flat top you are looking for. Keep in mind that reducing the temperature means you’ll need to increase the bake time. Check the cake about 5 minutes after the original bake time, and then keep checking about every 5 minutes. While we don’t want to over-bake the cake, we also don’t want to let cool air in from the open oven door. To test if it’s done, just stick a toothpick/skewer into the center, it should come out clean with just a few moist crumbs when it’s ready.
Insulate your pans
It is believed that the outside of the cake pan heats up faster & results in the outer rim of the cake baking up faster than the center of the cake. Insulating the outside of your pans by wrapping cake-baking strips or aluminium foil around them, should prevent the heat from reaching the outside of your tin quite as fast, leaving you with a more evenly baked cake.
