The Perfect High Tea

High tea is perfect when you’re feeling fancy! Think mini cakes, bite-sized bakes & delightful bites to nibble on. There’s no better excuse to gather some friends around & show off your baking. It’s always a classy affair – let your guests sip on tea or toast each other with a glass of champagne. This is an event sure to impress – rain, hail or shine!

Scones
You cannot have high tea without scones! These traditional bites can be spruced up with fruit, chocolate chips or a combination of flavors & textures (white chocolate & blueberry are our favorite!). Scones are super quick & easy to make, so pull them out the oven just before your guests arrive. The smell of them, warm & fresh will delight your guests. We suggest brushing them with a milk wash, just before baking, this will give them a perfect golden shine. Serve them with fresh cream & fruit preserves & you’re sure to have very happy guests!

Macarons
High tea is all about enjoying a variety of small, bite-sized treats. Macarons are such a crowd-pleaser – make them colorful & sandwich different fillings inside. They’re something that requires mastery of the technique, so keep baking them & you’re sure to master them with great success! These are the perfect treat to add some color to your high tea, pick any that goes along with your theme or try a few. For a quicker version, just fill the inside with whipped cream!

Mini Cakes
Just like our mini banana cakes, there is nothing more delicious than knowing you can have an entire cake to yourself (even if it is mini!). For a more traditional high tea, try a mini Victoria sponge cake – bake a plain sponge, fill with buttercream & strawberry preserves too. You can try this with any of your favorite cake recipes – yum!

Mini Tarts
Mini tarts are sure to add a touch of glamour to your tea, you can try mini lemon meringue tarts, chocolate tarts or fruit tarts – all are delicious. Or try Portuguese custard tarts, they are so delicious! Quick/make ahead tip: use a ready-made puff pastry for the tart base & your favorite custard recipe for the filling – so tasty!
