A Squeeze of Sunshine: 3 Ways With Lemon

While lemon is the most sour of fruits, it works well with the sweetness in many baked treats, giving a mouth-puckering tartness that’s hard to resist. That tart lemony flavor adds freshness & makes some delicious treats, these are some of our favorites!

Lemon Meringue Tart
A lemon meringue tart is a tart base, with silky smooth lemon curd, topped with beautifully crisp meringue. While this may sound like a complicated recipe, there are simple versions you can bake for a quick & easy dessert when you’re short on time. Our tip is to use a cookie/crumb base, instead of making a tart crust. Use your favorite crushed graham crackers or cookies together with butter to form a base at the bottom of your pie or tart dish. Fill this with your lemon curd & meringue – simple & delicious! Major wow factor if you take a blowtorch to the meringue (oven works too!)

These little bites are perfect for any afternoon tea. So easy to make, with just two steps! Just make a quick shortbread base by combining butter, sugar & flour together, then bake in a pan. Make your favorite lemon curd recipe, add to the shortbread base & refrigerate. So quick & easy, this one is a real crowd-pleaser.

Lemon Glaze
Lemon glaze is the perfect finishing touch for any vanilla cake. So easy to make too, just mix together confectioners’ sugar & lemon juice, it will be a runny consistency, perfect for drizzling over a cake (our favorite is over a bundt) or even on shortbread cookies. You can sprinkle some lemon zest over the top to make it look even more spectacular!
